The Ceylon cinnamon tree (Cinnamomum verum) is originally from Sri Lanka, formerly known as Ceylon, but this particular cinnamon is grown and hand-harvested in Madagascar. Cinnamon is harvested in such a way that the trees are able to regenerate their bark and continue to grow, so that a quality cinnamon crop can continue to be harvested.
Cinnamon is packed in small pieces because they are harvested exactly in that form and this helps the cinnamon to retain its intense, slightly fruity and sweet aroma and taste.
